This is Lisbon's first Michelin-starred vegetarian restaurant, and it earns the distinction without a single apology. There's no attempt to mimic meat here, no smoke and mirrors pretending a mushroom is a steak. Instead the kitchen celebrates vegetables, grains, and ferments entirely on their own terms, and the confidence of that approach is what makes the whole thing sing.

The tasting menu draws heavily on produce from the restaurant's own farm, then transforms it through techniques that feel simultaneously ancient and cutting-edge. Fermentation and fire do a lot of the heavy lifting, and the results can genuinely surprise you. A charred cabbage course might just be the best single dish you eat in Lisbon all year, its edges blackened and sweet, its heart yielding, proof that a humble vegetable in the right hands can outshine almost anything on a carnivore's plate.

The natural wine pairings are exceptional and worth committing to, chosen to echo the earthy, fermented notes running through the food.
