Belcanto is the kind of restaurant where each course arrives with a small story attached, and by the time dessert lands you realise the whole meal has been one continuous narrative about Portugal. Chef Jose Avillez takes the humblest of national staples, codfish, bread, olive oil, and reworks them until you find yourself quietly reconsidering everything you thought Portuguese cooking could be. Two Michelin stars and a place among the world's top 50 are not decoration here. They are earned, course by course.

The dish everyone talks about is the dessert christened The Garden of the Goose that Laid the Golden Eggs, a plate so playful and precise it would justify the reservation on its own. But the real pleasure is the arc of the whole tasting menu, the way savoury builds into sweet and technique never once smothers flavour. Nothing here is clever for the sake of it.

The wine pairing is genuinely exceptional, leaning on deep cuts from Portuguese regions most diners have never heard spoken aloud, poured by a team that clearly loves introducing them. Service is warm without ever tipping into stuffiness, a rare and difficult trick to pull off at this altitude of dining, and one Belcanto manages all evening long.

This is a special-occasion restaurant in the fullest sense, set in a stunning room in the heart of Chiado, and it asks a little preparation of you in return. Book weeks ahead, because tables vanish fast. Dress smart to match the room. And above all, arrive hungry and unhurried, with room and time for every single course, because rushing through Belcanto would be missing the entire point of coming. Give yourself the whole evening, let each story land, and you will walk out of Chiado seeing Portuguese cooking differently.
