Tucked into Alfama on the Travessa das Pedras Negras, this producer-driven kitchen builds its menu around the seasons and the people who grow its ingredients. In a city obsessed with seafood and pork, making vegetables the undisputed stars is no small act of rebellion, yet here it simply works, effortlessly and without any preachiness.

Start with the bread, which sounds like faint praise until you actually try it. Made from heritage Portuguese wheat, it's the kind of loaf that's genuinely worth a visit on its own, dense and fragrant with a crust that shatters. From there the vegetable dishes take over, and they're where the kitchen really shows off. A roasted cabbage dish has no business making you emotional, but somehow, here we are, the leaves caramelised and deep. Fermented and pickled elements thread through the menu, adding sharpness, funk and a complexity that keeps every plate interesting.

The wine list is a joy for the curious, focusing on small Portuguese producers and pouring bottles you won't find on the usual tourist trail. It's a natural fit for food this thoughtful, and the staff are happy to steer you toward something unexpected. This is beautiful, considered cooking that also happens to be quietly sustainable, never wearing its ethics as a badge.

Sitting comfortably in the €€€ range, Prado is open Wednesday through Monday for lunch and dinner, closing only on Tuesdays.
